Gorgonzola Stuffed Celery, Toasted Walnut and Green Apple Salad


Serves: 5-6 

Ingredients

1 bunch celery, trimmed
2 oz. gorgonzola cheese, creamy is preferable to crumbly 
5 oz. mixed greens (or 1 bag)
1 green apple, sliced thinly
1 oz. walnut pieces 
3 tbsp. olive oil
1 tbsp. fresh lemon juice
Salt and pepper

Method 

Toast walnuts in a pan without oil until they begin to darken and smell toasted, approximately 5 minutes. 

With a knife, spread gorgonzola inside celery stalks, then slice thinly. 

Combine salad greens, gorgonzola stuffed celery, toasted walnuts and apple slices in a salad bowl. Toss with olive oil and lemon juice. Salt and pepper to taste.
