Loaded with Calcium and Vitamin K, beautiful dark green collard green leaves are an excellent substitute for bread. Pair collard green wraps with this simple peanut sauce and you have perfect harmony!
•Collard greens
•Desired fillings, I desired:
•Cucumber, julienned
•Carrot, julienned
•Red cabbage, sliced
•Sprouts
•Cilantro
•Tofu, extra firm, patted dry with paper towels and pan fried in sunflower oil
Peanut Dipping Sauce
•1 tbsp. peanut butter (or less)
•3 tbsp. sunflower oil (or sesame oil)
•1 tbsp. tamari
•1 tsp. honey
•1 clove garlic, minced
•1/4 tsp. red pepper flakes
Method
To make wraps:
Arrange filling at top of collard green leaf, running parallel with the stem. With a knife, trim stem and excess leaf below ingredients. Roll leaf tightly from one side to the other, not top to bottom! Cut in half on diagonal.
To make sauce:
With a fork, stir all ingredients in a small bowl until fully incorporated.
