Chana Masala


I love to cook Indian Food. There is nothing like the aroma of delicious spices wafting through the house (who am I kidding, apartment). 

This chana masala recipe is very simple to make. I don't like to measure my spices and find myself adding a dash of cumin here and a sprinkle of turmeric there as I see needed. Have fun and add as much or as little spice as you like! 

Ingredients 

•1 can chickpeas, drained
•1 onion, finely chopped
•1 large tomato, finely chopped 
• 1 inch ginger, minced 
•3 cloves garlic, minced 
•1 tsp ground cumin
•1 tsp ground coriander 
•1/2 tsp turmeric
•2 tsp garam masala powder 
•2 green chilies, minced 
•2 tbsp olive oil
•1 cup water 
•2 tbsp fresh cilantro, chopped 
• Salt

Method

Add oil to a wok or large saucepan. Add onions and cook until translucent (a few minutes). Add tomato and cook several more minutes until begins to turn mushy. Add garlic and ginger and sautée for a few minutes. Add ground cumin, ground coriander, turmeric and garam masala powder and sautée for a few more minutes. Salt to taste. Stir in chickpeas. Add 1 cup of water and continue to cook on low for approximately 10 minutes. Transfer to serving bowl and garnish with cilantro.
